Indulge in Gluten-Free Mac and Cheese Heaven!

I was given this macaroni and cheese recipe from a friend, it is one of our favorite side dishes or meal of all time. I usually make two and throw one in the freezer so homemade comfort food is never too far.

Several years ago, I began to eat less gluten. I just feel better. So making our favorite recipe a gluten-free mac and cheese recipe was high on the to-do list. Check out this easy gluten-free (or use regular noodles) today.


4 cups cottage cheese

2 cups sour cream

2 eggs, beaten

1 teaspoon salt

Garlic salt and freshly ground black pepper to taste (we love garlic)

4 cups extra-sharp cheddar cheese, shredded

1 cup Swiss cheese, shredded

12 oz of elbow gluten-free macaroni, cooked and drained

**Note, you can make the gluten-free noodles the day before. Just rinse the noodles with cold water and put them in a container and keep them in the fridge.

You can also make the mac n cheese the day before. Just know you may have to cook it for 45-60 mins or until it is heated all the way through.


  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, combine cottage cheese, sour cream, egg, salt, garlic salt, and black pepper.
  3. Add cheddar and Swiss cheese and blend well. Cook macaroni as directed on the package and drain well.
  4. Add cooked macaroni to cheese mixture and blend until well coated. Add macaroni mixture to a greased 5-quart baking dish
  5. Bake, uncovered, for 25-30 minutes.
  6. If you like, broil it for 5 minutes. Just keep an eye on it so it doesn’t over cook. This can happen in a blink of an eye!
