I was given this macaroni and cheese recipe from a friend, it is one of our favorite side dishes or meal of all time. I usually make two and throw one in the freezer so homemade comfort food is never too far.

Several years ago, I began to eat less gluten. I just feel better. So making our favorite recipe a gluten-free mac and cheese recipe was high on the to-do list. Check out this easy gluten-free (or use regular noodles) today.
Ingredients
4 cups cottage cheese
2 cups sour cream
2 eggs, beaten
1 teaspoon salt
Garlic salt and freshly ground black pepper to taste (we love garlic)
4 cups extra-sharp cheddar cheese, shredded
1 cup Swiss cheese, shredded
12 oz of elbow gluten-free macaroni, cooked and drained
**Note, you can make the gluten-free noodles the day before. Just rinse the noodles with cold water and put them in a container and keep them in the fridge.
You can also make the mac n cheese the day before. Just know you may have to cook it for 45-60 mins or until it is heated all the way through.
Instructions:
- Preheat oven to 350 degrees F.
- In a large mixing bowl, combine cottage cheese, sour cream, egg, salt, garlic salt, and black pepper.
- Add cheddar and Swiss cheese and blend well. Cook macaroni as directed on the package and drain well.
- Add cooked macaroni to cheese mixture and blend until well coated. Add macaroni mixture to a greased 5-quart baking dish
- Bake, uncovered, for 25-30 minutes.
- If you like, broil it for 5 minutes. Just keep an eye on it so it doesn’t over cook. This can happen in a blink of an eye!
